is it possible to deactivate all of the cookies?
When entering the site two cookies will created:
_pk_id.1.e68b
_pk_ses.1.e68b
I would deactivate thes two cookies.

_pk_id is used to recognise a returning visitor
_pk_ses is used to group page views within visits
they are core requirements for JavaScript tracking
you would probably be able to avoid using cookies by using the server side tracking API Tracking API - Analytics Platform - Matomo
Agreed, used the server side tracking API mentioned above should fix the issue.
