Does Matomo Analytics track the visitor’s personal information (like gender, age group, language etc.) ?
If yes, let me know where we can see this data?

no, such informations are not available unless you have collected the data somewhere else, as Google is known to do. Matomo is privacy friendly.
However, if you absolutely want to do this and you have obtained this information from other sources (e.g. from a user account on your website, from a contact form, etc.), then you can save this as Custom Dimensions in Matomo.

An addition: language information can possibly be obtained from the tracked browser language.
