How can I remove parts of the Reporting menu (Ecommerce, Goals and Marketplace)?
We’re providing this service to clients and want to intentionally hide certain irrelevant menu items.

The more general way is to disable the corresponding feature if you don’t need it at all. But that doesn’t work with all core plugins.
But you can also create a custom plugin and use https://developer.matomo.org/guides/menus to not only add menu entries, but also remove them. Keep in mind this only removes the menu entries, not the possibility to use those pages if you know the URL
