Do you have an iPhone to access to test if it can access your Matomo instance? Ideally in combination with a Mac so you can check the browser developer tools for errors and failing requests.
Interestingly there was someone else recently who could not get iPhones (but iPads) to work.
Maybe there is something special with your setups that causes specifically iPhones to be blocked
