Hello, I just heard about the matomo plugin for WordPress, is it an alternative to Google analytics and how can I use it on my website and collect data?

It is free. You can pay to get some extra features if you want. It is good enough for low/medium traffic websites.

If you have more than 100,000 visitors each month then it might be worth using on premise instead.

I have tried it on my site, and I love its features it’s better than Google analytics.
