I’d like to export a controlled subset of my data to the public, similar to what https://plausible.io/blog.elementary.io has for example. How can I set that up with Matomo?

Making the Matomo data visible to the public (like on https://demo.matomo.cloud) is pretty easy. You just have to give the anonymous user access to your site.
The controlled subset part is far harder and not really supported by Matomo.
You can of course always use the Matomo API to (server-side) request data and then display it to your visitors in some processed way.
