I want to implement Matomo Analytics in AMP webpages. Is it possible? What is or where can I find the code that should be added to the HTML of an AMP webpage.

You can’t just embed the normal tracking code as it is intentional that such JS doesn’t work in AMP. You might be able to set up AMP to send requests to the Matomo tracking API as explained in the linked <script type="application/json">. But I can’t promise that this works reliably.
Honestly, someone who is more of an expert in AMP would need to contribute a guide or fix on how one could implement Matomo in AMP.
