is it possible to install piwik not into the root dir of the Apache ?
sure, you can install piwik in “every” location you like (subfolder’s, rootfolder, etc.)

I can confirm that it will install in subdirectories, as that’s how one of my installations works.
Obviously, installing above the docroot won’t be any good, because your webserver won’t serve up the pages there.
