what are the parameters to store config_device_type,config_device_model,config_os,config_os_version in piwik_log_activity table in rest API.

they are automatically detected from the User Agent. User Agent can be set using &ua= parameter in HTTP tracking API: Tracking HTTP API: API Reference - Matomo Analytics (formerly Piwik Analytics) - Developer Docs - v3
