In https://matomo.org/faq/how-to/faq_59/ the paragraph under the subheading 1) Delete old Tracking Logs it should read

click on Administration > Privacy > Anonymize Data > Delete old visitor logs

instead of

click on Administration > Privacy > Delete old visitor logs from database

I think you are talking about How do I delete historical Piwik data? (purge old logs and/or old processed reports) - Analytics Platform - Matomo

Indeed the settings structure changed with the GDPR update and I have now fixed the FAQ.
