Can someone please explain to me the effects of deleting a website.
What historical data is lost? What is kept?
Will I still be able to review my older reports which contain the data related to the deleted sites?

Deleting the site will delete the row from the piwik_site table, but will not actually delete the data (see the FAQ to delete site data: How to - Analytics Platform - Matomo )
