I would like to know if Matomo can analyze the server LOGS instead of the JS tracker?
If so, will it allow me to remove Motamo from my site?

Short answer: Yes.
Long answer: You probably should first look into why Matomo takes this long to load, it’s not normal. The reason is, that you lose some information about the browser with log tracking.
The test for this forum is not better than my site
Even with js I do not use a cookie, so I do not think I’m losing data with log analysis.
Is there a way to analyze logs in real time?
I saw several solutions for Matomo’s analysis. JS, image, html, … is this the only solution that avoids linking Motomo to my production site ?
You will lose data like screen resolution, installed plugins, etc.
The call to piwik.php
should take like 100-200ms and is asynchronous, so it will not block the rendering anyway if used correctly. Do you have browser archiving enabled?
Have you already tested the Queued Tracking - Matomo Plugins Marketplace plugin?
On my instance tracking takes max. 100ms

In both methods there are advantages and disadvantages.
The log analysis method tracks visitors who have activated not to follow.
